A friend of mine has the tradition of eating sushi for Thanksgiving, but for the vast majority of us it’s turkey, stuffing, and pie … oh my! As a vegetarian, I’ve had a lot of great Thanksgivings eating just the “sides,” but with all of these creative and delicious—decadent even—vegetarian and vegan Thanksgiving main-dish options, why settle for eating just the mashed potatoes?

Plant-based protein-rich foods like seitan and tempeh have a delightfully hearty texture and, paired with warming spices, make excellent substitutes for bird. Vibrantly colored squash makes an eye-pleasing main, and even comfort foods like polenta make tasty, hearty additions to the feast.
