A friend of mine has the tradition of eating sushi for Thanksgiving, but for the vast majority of us it’s turkey, stuffing, and pie … oh my! As a vegetarian, I’ve had a lot of great Thanksgivings eating just the “sides,” but with all of these creative and delicious—decadent even—vegetarian and vegan Thanksgiving main-dish options, why settle for eating just the mashed potatoes?

Plant-based protein-rich foods like seitan and tempeh have a delightfully hearty texture and, paired with warming spices, make excellent substitutes for bird. Vibrantly colored squash makes an eye-pleasing main, and even comfort foods like polenta make tasty, hearty additions to the feast. With the diverse eating habits in my family, Thanksgiving used to be a chore as we tried to replicate the traditional meal to suit everyone. Now we just cook amazing fall food like roasted veggies, stuffed squash, garlic mashed potatoes, and even turkey (for those who eat it). It's the best meal ever!
