Ingredients

  • ½ cup cooked steel-cut oats
  • ½ cup roasted vegetables (mix of diced sweet pepper, sweet potato and zucchini)
  • ½ cup sautéed torn Swiss chard
  • 1 cooked egg, halved
  • 3 tablespoons purchased salsa verde
  • 2 tablespoons cilantro and avocado

Instructions

  • Place cooked oats in a bowl and top with piles of roasted vegetables and sautéed chard. Top with cooked egg halves and salsa verde and garnish with chopped cilantro and avocado.
