Mango Salsa

Ingredients

  • 1 cup organic dried mangos 3.75 ounces
  • 1/4 cup fresh lime juice about 2 limes
  • 2 large tomatoes, seeded and chopped
  • 1 ripe avocado, pitted and cubed
  • 1/3 cup chopped red onion
  • 3 tablespoons minced fresh cilantro
  • 1 jalapeƱo pepper, seeded and finely chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper

Instructions

  • Using kitchen shears, dice dried mangos into 1/4-inch pieces. Transfer to a small bowl and add lime juice; marinate for 15 minutes. Add remaining ingredients and mix; refrigerate 2 hours.
