  • 3 yellow onions diced
  • 5 garlic cloves peeled and minced
  • 1 tsp dried thyme leaves
  • 1/2 tsp dried rosemary leaves
  • 1/4 cup tomato paste
  • 1/2 cup vegan red wine or vegetable broth
  • 1 1/2 cups green lentils rinsed
  • 4 cups vegetable broth
  • 2 lbs sweet potato peeled and roughly chopped
  • 1/4 cup tahini
  • 1 Tbsp low-sodium soy sauce or tamari gluten free
  • 1 Tbsp balsamic vinegar
  • 1/2 tsp freshly ground black pepper
  • 2 Tbsp vegan butter
  • 1 Tbsp nutritional yeast
  • 1 Tbsp maple syrup
  • 1/4 tsp kosher salt
  • 1/4 cup plant-based milk of choice
