Herring Beet Apple Salad on Rye Crisps

Ingredients

  • 1/2 lb boneless pickled herring sliced into 1 inch pieces
  • 1 medium beet peeled and grated
  • 1 tart appled chopped into 1/2 inch pieces
  • 1/4 cup chopped dill
  • 2 Tbsp finely chopped shallot
  • 1/3 cup plain Skyr yogurt
  • 2 Tbsp prepared horseradish
  • 1 Tbsp lemon juice
  • 12 large rye crackers

Instructions

  • In large bowl, toss together herring, beet, apple, dill, and shallot.
  • In small bowl, stir together yogurt, horseradish, lemon juice, and salt. Add yogurt mixture to herring mixture and toss gently.
  • Serve salad on top of rye crackers.
