Fennel Salad with Green Goddess Dressing

Ingredients

fennel bulb, thinly sliced

cucumber, peeled, seeded, and sliced

scallions, white and light green parts, chopped

shredded carrots

DRESSING:

green peas, fresh or frozen and thawed

cup
plain soy milk

tablespoons
fresh lemon juice

cloves garlic

sprigs fresh mint

leaves fresh basil
Instructions
In a blender, purée all dressing ingredients; season with salt and pepper. Chill.
Combine fennel, cucumber, scallions, carrots and greens. Drizzle with about half of dressing and toss lightly; add more to taste. Serve immediately.
