Chickpea Cilantro Salad

Ingredients

  • 3 1/4 cups chickpeas drained and rinsed
  • 1 cup diced yellow bell pepper
  • 1 cup diced green onions
  • 2 cups chopped cilantro
  • 2 garlic cloves peeled
  • 3 Tbsp extra-virgin olive oil
  • 1/4 cup fresh lime juice
  • 1 tsp salt
  • Black pepper to taste

Instructions

  • In large mixing bowl, combine chickpeas, bell pepper, and green onions.
  • In food processor, add cilantro, garlic, olive oil, lime juice, salt, and pepper; pulse until smooth.
  • Pour dressing over chickpea mixture and stir to coat. Let sit for 20 minutes before serving.
