Cherry Tomato Marinara with Zucchini Noodles

Ingredients

  • 2 pints cherry tomatoes
  • 2 teaspoons dried oregano
  • 1 teaspoon dried rosemary
  • 2 tablespoons lemon juice
  • 2/3 cup olive oil
  • 1 teaspoon salt
  • 2 zucchini, cut into very thin strips, using a spiral slicer if possible

Instructions

  • Place all ingredients except zucchini in blender. Blend until smooth. (Makes 3 cups.) Place zucchini noodles in a serving bowl; pour marinara over and toss gently.
