Each year at Thanksgiving, Skokan makes two distinct versions of cranberry relish (find the second one at deliciousliving.com/nov12). This one is bright, fresh, and vivid because it uses raw cranberries, and it’s a snap to make.
Ingredients
- Juice and zest of 1 organic orange
- 2 cups fresh cranberries
- 1 tablespoon grated fresh ginger
- 1/4 cup plus 2 tablespoons natural cane sugar
Instructions
- In a food processor, combine orange juice, cranberries, ginger, and sugar. Process until crumbly. Remove to a bowl, add zest, and mix well to combine.
