Stunningly good. Don’t throw away the muddled apricots; transfer to a bowl until the ice melts, and then drain and use in cookie dough or quick-bread batter or on top of yogurt.

Ingredients
- 5 organic dried apricots, diced
- 1 teaspoon simple syrup to make, dissolved one part sugar in one part boiling water
- 1/2 ounce Creme de Peche or any peach-flavored liqueur
- 2 ounces vodka
- Dash of lemon bitters
- Ice cubes, to fill
- Dried apricots, for garnish
Instructions
- Muddle apricots and simple syrup in a shaker. Add Crème de Pêche, vodka, bitters, and ice. Shake and strain into a martini glass. Garnish with a dried apricot (floating in drink or on rim of glass).
