This simple side dish, loaded with antioxidants, features chewy, sweet goji berries and carotenoid-rich squash. If you need to reheat, add a little soy milk to moisten. Serving tip: Accompany with braised kale and grilled salmon for a colorful, healthy meal.
Ingredients
- 1 butternut squash (1 1/2 -2 pounds)
- 1/2 cup dried goji berries
- 3 tablespoons pure maple syrup
- 1/2 cup chopped walnuts
- 1 1/2 teaspoons ground cinnamon
- Salt to taste
Instructions
- Preheat oven to 400°. Cut squash in half lengthwise and scoop out seeds. Place halves in a large baking dish, cut side up; add 1/4 inch of water to pan and cover with foil. Place in oven and bake for 45-50 minutes, or until tender. Remove from oven.
- Using oven mitts to hold squash, scoop out pulp, transfer to a medium bowl, and mash. Stir in goji berries, maple syrup, walnuts, cinnamon, and salt to taste. Serve immediately.
