Freeze in an ice-cube tray; drop three to four coconut cubes into chai tea for a smooth, cool treat.

Mix coconut milk with minced garlic, grated ginger, lime juice, and crushed red pepper flakes. Use as a marinade for chicken or fish.

Dilute with a bit of water; substitute for liquid in pancake or waffle batter.
