How To Select: Muskmelon, the true name for what we call cantaloupe, has a webbed rind and ambrosial, pale orange flesh. The best melons are slightly golden (not green), heavy, and fragrant at the tender, indented end. Avoid discolored ones, but don’t worry about smooth patches; that’s where the growing melon rested on the ground.
Preparation Tips: Store at room temperature; refrigerate when ripe. Toss slices with lime juice and ginger for a refreshing breakfast. Freeze peeled chunks and blend into smoothies. Skewer cantaloupe and pineapple pieces and grill; the caramelized fruit pairs beautifully with fish or chicken.
