Ingredients
Salad
- 12 cups baby arugula
- 1 pink or red apple cored and sliced
- 1 avocado pitted, peeled, and sliced
- 2 grapefruits peeled and segmented, membranes removed
- 1/2 cup pomegranate arils
- 1/4 cup halved walnuts
- 1 Tbsp hempseeds
- Pink flowers for garnish (optional)
- Fresh mint leaves for garnish (optional)
Pink Greek dressing
- 1/3 cup organic olive oil mayonnaise
- 1/4 cup fresh raspberries or 1 small cooked beet
- 1/4 cup feta
- 1 tsp honey
- 1 clove garlic roughly chopped
- 1/4 tsp dried oregano
- Juice of 1/2 lemon
- 1/2 tsp sea salt
- 1/2 tsp fresh cracked black pepper
Instructions
- For salad, place arugula on large platter. In medium bowl, gently toss together apple, avocado, and grapefruit. Arrange atop arugula. Sprinkle with arils, walnuts, and hempseeds. Garnish with flowers and mint, if desired.
- For dressing, combine all ingredients in blender and puree until smooth. Drizzle over salad and enjoy!
