Here’s a quick medicinal for the onset of a cold; it’s easy to make when a soothing soup is needed. Add tofu cubes to mellow the astringency, if desired. If you have no access to key limes, try substituting half lime juice and half lemon juice for the required amount of key lime juice. It won’t be the quite same, but it will be closer than using all Persian lime juice.
1 quart low-sodium vegetable or chicken broth
1 tablespoon finely minced fresh garlic
1/4 teaspoon cayenne pepper (or to taste)
2 tablespoons low-sodium tamari
1 teaspoon honey
2 eggs, beaten
Zest of 1 key lime
1/4 cup fresh key lime juice
1 scallion, green only, finely diced
1. Heat broth, garlic, cayenne, and tamari. Let simmer for 5 minutes. Add honey. Swirl in beaten eggs and let stand until egg strands solidify. Remove from heat and add lime zest and juice. Stir. Serve, topped with scallion greens.
