Serves 4–6 / Serving tips: These can be served as an appetizer, a replacement for french fries, or as a vegetable side dish, even with ketchup. However or whenever you serve them, they will be delicious.
4-6 rutabagas (1-1 ½ pounds)
2 tablespoons olive oil or ghee
Coarse sea salt
1. Preheat oven to 450˚. Thickly peel rutabagas; then slice into wedges that are more or less the same size so that they’ll cook evenly. Toss with olive oil or ghee and sprinkle with several pinches of salt. Transfer to a baking sheet and roast, turning occasionally, until golden and crisp, about 25 minutes (time will vary depending on their dryness). When done, remove and toss with another few pinches of salt and some freshly ground pepper.
