Can you believe that Thanksgiving is just a few weeks away? Cue the freak-out over planning your dinner menu or potluck dish.
I’m a huge fan of keeping things simple during Thanksgiving or any dinner party. After all, what’s the point of having friends and family over for dinner if you’re stressing out in the kitchen the whole night?
That’s why I’m super excited to share these quick-and-easy holiday recipes from 34 Degrees, makers of delicate, tasty and elegant wheat crackers. The toppings are easy-to-find and prepare, and the presentation is festive. Bonus: These Delicious Living-approved combinations all contain minimal ingredients, leaving you more time to prep the real show stopper (which in my world are the mashed potatoes … sorry, turkey).

Goat Cheese with Spiced Honey & Pomegranate Seeds
• 8 cracked pepper thin crackers
• 2 ounces soft goat cheese, room temperature
• ¼ cup pomegranate seeds
• 2 tablespoons honey
• Cumin and black pepper, to taste
Place crackers on a plate. Top each crisp with a dollop of goat cheese; garnish with pomegrate seeds and a drizzle of honey. Dust with spices. Serve.
Brie with Grape & Pecan Relish
• 24 rosemary-scented thin crackers
• 4 ounces Brie, room temperature, sliced into 24 pieces
v1 cup red grapes, roughly chopped
• ¼ cup red onion, diced
• ¼ cup pecans, chopped
• 1 tablespoon fresh flat-leafed parsley, chopped
• 1 scallion, trimmed and thinly sliced
• 1 teaspoon red wine vinegar
• Kosher salt and ground pepper
In a small bowl, combine grapes with red onions, pecans, parsley and scallions. Add red wine vinegar, and salt and pepper, to taste. Place crackers on a serving plate, and top each with one slice Brie, and a small spoonful of the grape mixture. Serve.
Roasted Turkey with Cranberry & Spinach
• 24 whole-grain crackers
• 6 ounces roasted turkey, thinly sliced
• 24 baby spinach leaves
v2 ounces homemade or purchased whole-berry cranberry sauce
• Orange zest, for garnish
Place the crackers on a serving plate, and top each one with a spinach leaf. Add a dollop of cranberry sauce, and a small roll of turkey. Garnish with orange zest and serve.
