1/2 cup water
4 pears, cored and cut into chunks
2 tablespoons rice syrup
1/4 cup golden raisins
1/4 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 1/2 tablespoons tawny port
Lemon zest (grated peel) to garnish
1. Combine pistachios and water in a blender to make a nut milk; puree until smooth.
2. Combine pears, rice syrup, raisins, cinnamon, cardamom, salt, port and nut milk in a large, heavy-bottomed saucepan. Bring to a boil, then reduce to simmer and cook 3 to 5 minutes or until raisins are just plump.
3. To serve, spoon compote into wine glasses and garnish with a sprinkling of lemon zest.
