Maple-Glazed Cranberries Yields 1 1/2 cups Crimson, sweet-tart cranberries add sparkle to our Lovely Lemon Layer Cake but won’t give you a sugar rush. Fresh cranberries are available from September until December. Buy extra cranberries while they’re in season and freeze them to use year round.

1/4 cup maple syrup
1-1/2 cups fresh or frozen cranberries
Pinch of sea salt
1/2 teaspoon orange extract
1. Pour maple syrup into a small, heavy-bottomed saucepan. Bring syrup to a low boil. Stir in cranberries and salt and cook until cranberries just start to burst. Remove from heat and stir in orange extract. Let berries cool completely before garnishing cake.
