2 envelopes unflavored gelatin
1/2 cup cold water
3/4 cup sugar
1 1/2 cups boiling water
1 teaspoon grated key lime peel
2/3 cup fresh key lime juice
4 egg whites
1. Sprinkle gelatin over cold water in a large bowl and let stand 5 minutes. Stir in sugar until blended. Add boiling water and stir until gelatin is completely dissolved, about 3 minutes. Add lime peel and juice. Chill until slightly thickened, about 15 minutes.
2. Beat egg whites until stiff. With beater still running, gradually add gelatin mixture until soft peaks form. Spoon into individual dessert cups. Chill for 2 hours. Garnish with a twisted lime peel.
