It's Hemp History Week! If you've never tried cooking with this superfood before, these recipes from Erin Bronner are a great place to start.
Hemp is a complete, easily digestible protein source that's rich in omega-3s, omega-6s, and essential amino acids. But it's not just a good source of nutrients: Hemp's value as a sustainable crop is virtually limitless, with an ever-expanding lineup of uses—from textiles, clothing, and body care products to building materials and even auto parts.
Slowly but surely, industrial hemp production in the United States is coming back, as states introduce new legislation to bring this highly sustainable crop back into the mainstream. (Oh, and in case you were still unsure, hemp can't get you high like its infamous cousin; it contains less than 0.3% THC, the psychoactive compound found in marijuana.)
