Serves 6 / Other seasonal fruits may be used in place of pears in this light and refreshing dessert.
1 (3-inch) piece fresh ginger, unpeeled
½ cup water
2 tablespoons honey, or to taste
Juice of 1/2 lemon
4 ripe Comice pears, peeled, cored, and coarsely chopped
1. Grate ginger finely into a small strainer; using fingers, press every drop of ginger juice into a food processor. Discard solids. Add water, honey, lemon juice, pears, and a pinch of sea salt. Process until smooth, scraping down sides as needed. Taste and adjust sweetener or salt. Freeze in an ice-cream maker per manufacturer’s directions. (Alternatively, pour into a rimmed baking sheet and freeze until solid, at least 3 hours; turn out onto a cutting board and chop coarsely. Then place in a food processor and process until smooth.)
