Flax Medley Breakfast
Ingredients
GRANOLA
- 3 1/2 cups rolled oats
- 1 cup toasted wheat germ
- 1/2 cup raw sesame seeds
- 1/2 cup raw hulled sunflower seeds
- 1/3 cup canola oil
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 tablespoon ground flaxseed
- 6 ounces nonfat plain or vanilla yogurt (or a mixture), or vanilla soy milk
- Fresh strawberries or blueberries optional
- Honey, to taste optional
Instructions
- In a large bowl, mix together oats, wheat germ, sesame seeds, and sunflower seeds. Add oil, honey, and vanilla extract; mix well. Spread on a rimmed baking sheet lightly coated with cooking spray. Cook at 275° for 1 hour, stirring every 15 minutes. When mixture is cool, crumble and store in an airtight container.
- To serve, mix 1/2 cup granola with ground flaxseed and yogurt or soy milk. Top with fruit and sweeten with honey, if desired.
