Teff Chocolate Cookies
Ingredients
- 1/4 cup (48.27 grams) uncooked teff grains
- 3/4 cup (118.5 grams) brown rice flour
- 1/4 cup (28 grams) almond flour
- 1 1/2 tablespoons unsweetened cocoa powder or carob powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cloves or allspice
- 1/4 cup coconut nectar (such as Coconut Secret)
- 1/2 cup coconut milk
- 1/2 teaspoon almond or vanilla extract
- 1/2 cup vegan mini chocolate chips (optional)
Instructions
- Preheat oven to 350˚. In a medium bowl, combine all dry ingredients (teff through spices). In another bowl, mix coconut nectar, coconut milk, and extract. Fold wet and dry ingredients together. Fold in chocolate chips, if using. Drop by spoonfuls onto a parchment-lined baking sheet; flatten slightly. Bake 8-10 minutes. Transfer paper to a cooling rack.
