Sautéed Grape Tomatoes with Pesto

Ingredients
  • 1/2tablespoon extra-virgin olive oil
  • 1/4cup chopped onionfresh or frozen
  • 1pint (12 ounces) grape tomatoes
  • 1teaspoon minced garlicjarred or fresh
  • 2tablespoons basil pesto, excess oil drainedjarred or fresh
  • 1teaspoon grated Parmesan cheese
  • Salt and black pepperto taste
Instructions
  1. Heat oil in a large skillet and sauté onion until tender. Add tomatoes and sauté until they blister and burst, about 3 minutes.
  2. Stir in garlic. Remove from heat and stir in pesto, cheese, salt, and pepper.
