Ingredients
2cupsbaby spinach leaves
12baby carrots, cut into toothpicks
1red bell pepper, thinly sliced
40green grapes, halved
2pears, sliced
4tablespoonsslivered almonds, lightly toasted
4tablespoonsGorgonzola cheese crumbles
2ouncescanned smoked salmon, drained
DRESSING
2 1/2tablespoonsDijon mustard
1tablespoondry mustard powder
1/3cuphoney
1 1/2tablespoonsrice vinegar
2tablespoonsflaxseed oil
Instructions
Combine all dressing ingredients and shake until blended.
In a large bowl, combine spinach, carrots, red bell pepper, grapes, and pears. Drizzle about half of the dressing over salad and toss. Sprinkle with almonds; top with Gorgonzola and salmon.
