Quinoa, Pepper, Black Bean, and Corn Salad

Ingredients
  • 1cup red bell pepperfinely diced
  • 1cup yellow bell pepperfinely diced
  • 1cup orange bell pepperfinely diced
  • 1cup corn
  • 3/4cup sliced red onion
  • 14oz can black beansdrained and rinsed
  • 1 1/2cups cooked quinoa
  • 2cups grape tomatoes
  • 1/2 jalapeƱo pepperde-seeded and very finely diced
  • 1cup chopped cilantro leaves and tender stems
  • 1/2tsp cumin
  • 1/2tsp chipotle powder
  • 3 Tbsp extra-virgin olive oil
  • 3 Tbsp lime juice
Instructions
  1. In large mixing bowl, combine bell peppers, corn, onion, beans, quinoa, tomatoes, jalapeno pepper, and cilantro. In small bowl, combine cumin, chipotle powder, and salt. Sprinkle over salad along with olive oil and lime juice. Mix well.
