Here's a welcome version of traditional guacamole, with all of the rich taste but decidedly less fat. And it takes just 5 minutes to prepare!
Quick Bean Guacamole
Ingredients
- 1 15-ounce can organic navy or great Northern beans, rinsed and drained
- 1 ripe Haas avocado, scooped out in chunks
- 3/4 cup bottled salsa (mild or hot, according to taste)
- 1 to 2 tablespoons lime juice
- Salt to taste
- 3 tablespoons chopped fresh coriander for garnish
Instructions
- Place beans, avocado, salsa and 1 tablespoon lime juice in a food processor. Pulse just enough to create a coarse puree. Add extra lime juice and salt to taste. Transfer to a small serving bowl and garnish with coriander.
