The Pathway To Healing Banana Bread with Coconut Sugar and Yogurt
Ingredients
  • 2 eggs
  • 1cup coconut sugar
  • 1/3cup canola oil
  • 4 very ripe bananas
  • 2tablespoons vanilla extract
  • 1 teaspoon baking soda
  • 2teaspoons baking powder
  • 1teaspoon cinnamon
  • 1/2teaspoon nutmeg
  • 1 2/3cup flour
  • 1cup whole wheat flour
  • 1cup plain Greek yogurt
  • 1cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a loaf pan generously with a no-cholesterol cooking spray, set aside.
  3. In a medium bowl, combine all dry ingredients and set aside.
  4. In another bowl, whisk eggs, oil and sugar together.
  5. Whisk yogurt into ‘wet’ mixture.
  6. Mash bananas and add to this mixture.
  7. Slowly stir in the dry ingredients until all ingredients are well incorporated.
  8. Stir in walnut until well distributed in the batter.
  9. Use a spatula to scrape all batter into prepared loaf pan.
  10. If the top of the loaf starts to get too brown, make a tent over the top using foil.
  11. Bake for 30-40 minutes or until a knife comes out clean from the center.
  12. Let stand about 10 minutes then turn out onto a cutting board or platter.
