Open-Faced Shrimp Sandwich with Celery, Radish, and Sunflower Shoots

Ingredients
1cupsmall pink shrimpcooked and peeled
1/4cupcelery
1/4cupfinely chopped green onion
1/4cupfinely sliced radish
1/4tspDijon mustard
1Tbspfreshly squeezed lemon juice
1Tbspfinely chopped parsley
1Tbspfinely chopped chives
Pinch of salt
1/4tspfreshly ground pepper
1cupsunflower or pea shoots
4butter lettuce leaves
4slicesof whole grain bread
Instructions
In small bowl, mix all ingredients, except lettuce and bread, together and heap into lettuce cups. Toast bread (if desired) and place lettuce cups on toast.
