Ingredients
  • 4tablespoons milk of choice
  • 2 large eggs
  • 3 tablespoons pure maple syrup
  • ½teaspoon pure vanilla extract
  • 4tablespoons unsweetened cocoa powder, plus more for dusting, if desired
  • 4tablespoons gluten-free almond flour
  • 2tablespoons Neocell Super Collagen Powder
  • ¼ teaspoon baking powder
  • 3tablespoons unsalted butter or dairy-free buttery sticks
  • Whipped coconut cream for serving, if desired
Instructions
  1. In a small mixing bowl or large glass measuring cup, whisk together the milk, eggs, maple syrup, and vanilla. Add the cocoa powder, almond flour, Neocell Super Collagen Powder, and baking powder and whisk well to combine.
  2. Divide the butter between two (6- or 8-ounce) microwave-safe mugs or cups. Microwave on high power for 15-30 seconds to melt the butter. Swirl to coat the inside of the mugs with the melted butter. Divide the batter evenly between the mugs. Stir to combine the butter with the batter.
  3. Microwave on high power for 1½ – 2 minutes or until the cakes are set. Serve with whipped cream and a dusting of cocoa powder, if desired.
