Ingredients
  • 8 mini pitas
  • 1cup tomato sauce
  • 2cups baby spinach
  • 3/4lb cooked chicken breastthinly sliced
  • 1cup roasted red peppersliced
  • 1cup cherry tomatoeshalved
  • 3oz fresh mozzarellathinly sliced
  • 1/3cup torn fresh basil
Instructions
  1. Freshly cracked black pepper, to garnish
  2. Preheat oven broiler to high. Place pitas on baking sheet and broil until browned and crispy, about 2 minutes. Be careful not to burn pitas.
  3. Spread pitas with tomato sauce and then top with spinach, chicken slices, roasted red pepper, tomatoes, and mozzarella. Broil on high until cheese has melted, about 2 minutes. Top with basil and some freshly cracked black pepper.
