Heat up the juice, honey and ginger in a small saucepan. As it heats, sprinkle the gelatin and whisk it in to mix. Once ingredients start to simmer, remove from heat and continue whisking constantly until the gelatin is dissolved.
Pour into silicon gummy molds or silicon ice cube trays. To speed up the gelling time, put the filled molds into the freezer for about 10 minutes then pop bears out of molds onto a plate.
Repeat until you use up all of the gelatin mixture. (If the gelatin starts to gel before you pour into the molds reheat it.) Makes 120-140 ¾ inch gummy bears.
