- 1/2 lb boneless pickled herring sliced into 1 inch pieces
- 1 medium beet peeled and grated
- 1 tart appled chopped into 1/2 inch pieces
- 1/4 cup chopped dill
- 2 Tbsp finely chopped shallot
- 1/3 cup plain Skyr yogurt
- 2 Tbsp prepared horseradish
- 1 Tbsp lemon juice
- 12 large rye crackers
- In large bowl, toss together herring, beet, apple, dill, and shallot.
- In small bowl, stir together yogurt, horseradish, lemon juice, and salt. Add yogurt mixture to herring mixture and toss gently.
- Serve salad on top of rye crackers.
