Green Herb and Chicken Bun Cha
Ingredients
  • 1lb ground chicken or turkey
  • 1/2cup shredded fresh basil
  • 1Tbsp Almond butter
  • 1tsp lime zest
  • 1/4tsp sea salt
  • 1/2lb brown rice vermicelli
  • 2Tbsp lime juice
  • 2Tbsp raw honey
  • 1Tbsp low-sodium gluten-free tamari
  • 1Tbsp avocado oil
  • 1cup roughly chopped fresh cilantro
  • 1 head butter lettuceshredded
  • 1/2cup raw almondschopped (optional)
  • 1/2 fresh red chili pepperthinly sliced
Instructions
  1. For chicken meatballs, preheat oven to 400 F. Line large rimmed baking sheet with parchment paper. In medium bowl, mix chicken or turkey, basil, almond butter, lime zest, and salt until combined. Roll into balls and place on prepared baking sheet. Bake for 15 to 20 minutes, or until chicken is cooked through. Reserve.
  2. For noodles, fill kettle with water and bring to a boil. Add vermicelli to large bowl; cover completely with boiling water. Let sit for 3 to 5 minutes, or according to package directions; drain and rinse. Divide noodles among 4 serving bowls.
  3. For dressing, in small bowl, whisk lime juice, honey, tamari, and oil until combined.
  4. To assemble, add sections of meatballs, cilantro, and lettuce to serving bowls; top with dressing, almonds (if using), and chili pepper. Serve.
