Ingredients
3cupstorn dandelion leaves
1bunchwatercress, roots trimmed
1mediumcarrot, gratedabout 1/2 cup
1/2cupslivered red onion
1smallcucumber, peeled, seeded, and sliced
1/2cupchopped fresh cilantro
DRESSING
2tablespoonsfresh lime juice
1/2tablespoonlow-sodium soy sauce
1/2tablespoontoasted sesame oil
1/2tablespoonextra-virgin olive oil
1/2teaspoonchili-garlic sauceor 1/8 teaspoon crushed red pepper flakes
2teaspoonsnatural cane sugar
1/2tablespoonminced fresh ginger
Instructions
Toss dandelion, watercress, carrot, onion, cucumber, and cilantro in a large salad bowl. Whisk all dressing ingredients in a small bowl. Drizzle over salad and toss gently.
