Couscous
Ingredients
- 8 boneless, skinless chicken thighs
- 3 tablespoons all-purpose flour, divided
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon tomato paste
- 1 ½ cup pinot noir
- 1 cup reduced-sodium chicken broth
- 2 cup button mushrooms, quartered
- 1 cup pearl onions
- 3 sprigs fresh thyme
- 1 cup red grapes, halved
- 1 tablespoon butter, room temperature
- ¼ teaspoon salt
- ¼ teaspoon pepper
- LEMON-ALMOND COUSCOUS
- 2 cups dry couscous
- ½ cup sliced almonds, toasted
- ½ cup golden raisins
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- ¼ teaspooon salt
Instructions
- Season chicken with a pinch each of salt and pepper. In a gallon-size resealable plastic bag, combine chicken and 2 tablespoons of the flour; seal bag and shake until chicken is well dusted.
- In a large skillet, cook chicken in hot oil over medium heat about 8 minutes, turning to brown evenly. Drain fat.
- Add garlic to same pan and cook over medium heat for 30 seconds. Add tomato paste and cook, stirring continuously, for 1 minute. Add wine, broth, mushrooms, onions, and thyme. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes or until chicken is no longer pink (175°F). Add grapes and cook for 2 minutes. Transfer chicken and vegetables to a serving platter; keep warm.
- Meanwhile, cook couscous according to package directions. Fluff with a fork and stir in almond slices, golden raisins, lemon zest, lemon juice, and salt.
- Stir wine mixture in skillet and bring to a boil; reduce heat and simmer 5 minutes. Mash butter with remaining 1 tablespoon flour. Whisk butter-flour mixture, salt, and pepper into sauce; cook for 4–5 minutes.
- Pour sauce over chicken and vegetables. Top with additional fresh thyme and serve with couscous.
