Ingredients
  • 3 1/4cups chickpeasdrained and rinsed
  • 1cup diced yellow bell pepper
  • 1cup diced green onions
  • 2cups chopped cilantro
  • 2 garlic clovespeeled
  • 3 Tbsp extra-virgin olive oil
  • 1/4cup fresh lime juice
  • 1tsp salt
  • black pepperto taste
Instructions
  1. In large mixing bowl, combine chickpeas, bell pepper, and green onions.
  2. In food processor, add cilantro, garlic, olive oil, lime juice, salt, and pepper; pulse until smooth.
  3. Pour dressing over chickpea mixture and stir to coat. Let sit for 20 minutes before serving.
