Ingredients
  • 1 3/4cups certified-gluten-free oats
  • 1/2cup coarsely chopped walnuts or pecans
  • 3tablespoons pure maple syrup
  • 1 ripe bananaabout 1/2 cup mashed
  • 1/2cup unsweetened applesauce
  • 1/3cup dried cranberries
  • 1/4cup (1 1/4 ounces) chopped dried mango
  • 2slices dried kiwi, chopped
  • 1tablespoon ground flaxseed
  • 1teaspoon ground cinnamon
  • 1/2teaspoon coarse kosher salt
Instructions
  1. Preheat oven to 350°. Line a rimmed baking sheet and an 8×8-inch baking pan with parchment paper cut large enough to come up all four sides of pan.
  2. In a medium bowl, stir together oats, nuts, and syrup. Spread mixture onto baking sheet and bake for 10 minutes, stirring halfway through. The mixture should be lightly browning (not dark brown).
  3. Meanwhile, mash banana in a small bowl and stir in applesauce.
  4. Once oat mixture is toasted, pour back into medium bowl and add cranberries, mango, kiwi, flaxseed, cinnamon, and salt. Stir to mix well, and then stir in banana mixture. Once completely mixed, transfer to prepared 8×8-inch pan. Smooth top by pressing down with a rubber spatula.
  5. Bake for 35 minutes, or until bars are browning and pulling away slightly from pan sides. Cool on a wire rack for 15 minutes; then remove by pulling up on the parchment paper. Once cooled to room temperature, cut into bars. Store in an airtight container.
