Turkey and blueberries may seem an unlikely combination, but give this unique burger a try and you’ll be pleasantly surprised. Blueberries are a great source of antioxidant phytochemicals; flax adds additional fiber and essential fats; and both ginger and parsley are excellent for digestion. Served on English muffins with a side of fresh fruit, these taste good enough for breakfast!
Blueberry-Flax Turkey Burgers
Ingredients
- 1 pound ground turkey breast meat
- 1/2 cup dried blueberries
- 1/3 cup quick-cooking oats
- 1 tablespoon flaxseed, ground
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 3/4 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon dried basil
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground pepper
- 4 whole-wheat English muffins, halved and toasted
Instructions
- Lightly grease grill rack and preheat to medium-high.
- Combine all ingredients except English muffins in a large bowl. Mix thoroughly and form into four patties. Grill on medium-high for 5–7 minutes per side, or until meat is no longer pink in center. Serve immediately on toasted muffins.
