Ingredients
  • 14oz can chickpeasdrained and rinsed
  • 1/2cup canned black beansdrained and rinsed
  • 1/4cup extra-virgin olive oil
  • 1 garlic clovepeeled and crushed
  • 1 Tbsp tahini
  • 1/2tsp cumin
  • 1/4tsp chipotle powder
  • 2cup Limeszested and juiced, about 4 tsp zest and 1/4juice
  • 1cup fresh cilantro leaves and stems
  • 1/8tsp saltoptional
Instructions
  1. In blender, add chickpeas, black beans, olive oil, garlic, tahini, cumin, chipotle powder, lime zest and about half of the lime juice. Blend until smooth. Add cilantro and pulse until combined. Add remaining lime juice, to taste. Taste for seasoning and add salt if required.
  2. Serve with romaine wedges, carrot, celery, and other vegetables.
