A 21st-century upgrade to a classic recipe, this simple dish uses fruits of varied ripeness. It's great scooped on pancakes for breakfast, as a side dish with lunch and dinner, or topped with frozen yogurt for dessert.
Berry Lemon Applesauce
Ingredients
- 5 large apples, peeled if preferred, cored, and roughly sliced
- 1/3 cup dried cranberries
- 3/4 cup apple cider
- 2 tablespoons fresh lemon juice
- 1 cinnamon stick
- 1/4 cup clover honey
- 2 cups blueberries, raspberries, or sliced strawberries
- 1 tablespoon lemon zest 2 medium lemons
Instructions
- Place apples, cranberries, cider, lemon juice, and cinnamon stick in a large pan and simmer, covered, for 15 minutes, stirring regularly.
- Stir in honey and cook for 1 minute. Remove from heat. Remove cinnamon stick and mash apples with a wooden spoon to desired consistency.
- While mixture is still hot, stir in remaining fruit and lemon zest. Serve immediately.
