Ingredients
2red grapefruits
6cups (about 5 ounces)baby spinach leaves, washed and dried
1avocado, peeled, pitted, and sliced into crescents
1/4cuptoasted pine nuts
1/4cupcrumbled gorgonzolaoptional
POPPY SEED DRESSINGmakes about 1 cup
1/4cuphoney
1/4cupwhite wine vinegar
1teaspoonDijon mustard
1/2cupcanola or grapeseed oil
2teaspoonspoppy seeds
Instructions
To make dressing, whisk together honey, vinegar, and mustard. Add oil in a slow stream and mix well. Stir in poppy seeds.
Using a serrated knife, cut peel and membranes from grapefruit. Section fruit.
Gently arrange spinach on individual plates. Top with sliced avocado and grapefruit sections. Drizzle 1 tablespoon dressing over each salad. Sprinkle with toasted pine nuts and gorgonzola, if desired.
