Arugula Salad with Honey-Lime-Sesame Dressing

Ingredients
DRESSING
  • Juiceand zest of 1 lime
  • 1clove garlicminced
  • 1tablespoon minced red onion
  • 1(1-inch) knob peeled and grated fresh ginger
  • 1tablespoon Dijon mustard
  • 1-2tablespoons good-quality honey
  • 1tablespoon red wine vinegar
  • 1tablespoon honey vinegaror more red wine vinegar
  • 5tablespoons organic canola oilor any mild oil
  • 1tablespoon toasted sesame oil
SALAD
  • 4cups baby arugula
  • 1/4cup blue cheese crumbles
  • 1/4cup sliced almondstoasted
  • 1/2cup mandarin orange segments, drainedor fresh clementine segments
Instructions
  1. Place lime juice and zest in a large jar with a lid. Add garlic, onion, and ginger; mix. Add mustard, honey, and vinegars; mix. Add oils, plus salt and pepper to taste. Cover jar and shake vigorously until all ingredients are combined. Refrigerate a couple of hours to give all flavors a chance to come together. (Makes scant 1 cup.)
  2. In a salad bowl, combine all salad ingredients. Drizzle with about 3 tablespoons dressing (or to taste) and toss gently.
