This restaurant-quality salad combines crisp, clean flavors and textures. Add more ginger to the dressing if you like.
Arugula Salad with Honey-Lime-Sesame Dressing
Ingredients
DRESSING
- Juice and zest of 1 lime
- 1 clove garlic minced
- 1 tablespoon minced red onion
- 1 (1-inch) knob peeled and grated fresh ginger
- 1 tablespoon Dijon mustard
- 1-2 tablespoons good-quality honey
- 1 tablespoon red wine vinegar
- 1 tablespoon honey vinegar or more red wine vinegar
- 5 tablespoons organic canola oil or any mild oil
- 1 tablespoon toasted sesame oil
SALAD
- 4 cups baby arugula
- 1/4 cup blue cheese crumbles
- 1/4 cup sliced almonds toasted
- 1/2 cup mandarin orange segments, drained or fresh clementine segments
Instructions
- Place lime juice and zest in a large jar with a lid. Add garlic, onion, and ginger; mix. Add mustard, honey, and vinegars; mix. Add oils, plus salt and pepper to taste. Cover jar and shake vigorously until all ingredients are combined. Refrigerate a couple of hours to give all flavors a chance to come together. (Makes scant 1 cup.)
- In a salad bowl, combine all salad ingredients. Drizzle with about 3 tablespoons dressing (or to taste) and toss gently.
