Apple and Root Vegetable Slaw

Granny Smith apples

medium rutabaga

medium celery root

fresh lemon juice

coarsely chopped flat-leaf parsley
Instructions
Core apples; trim and peel rutabaga and celery root.
Coarsely grate apples and vegetables by hand or with a food processer fitted with a grater disc.
Toss in a large bowl with lemon juice and parsley.
