Children love the grown-up fun of breakfast in bed, but they may not like the grown-up flavor of fancier foods. Here are some ideas for little laps that will bring big smiles.
Sunshine parfaits. Layer yogurt with fresh fruit and granola in tall ice-cream glasses. Top with a cherry or a strawberry, or garnish the edge of the glass with a fresh orange wheel. Serve with a long spoon.
Breakfast spaghetti. Shape turkey or soy sausage into small meatballs and fry until done. Warm store-bought crepes and roll into a cylinder. Cut crepes into thin strips and toss with warm maple or fruit syrup. Top with meatballs and serve.
Banana boats. Slice an unpeeled banana down the middle; don’t cut through the bottom skin. Pry open and fill the center with dried fruit, nuts, and chocolate chips. Wrap in a paper towel or plastic wrap and microwave for 30 seconds to 1 minute, until the banana is hot throughout and the chocolate is melted.
