Instead of following roasting or baking times to a T, be bold and turn off the oven or stove several minutes early, says Jackie Newgent, RD, culinary nutritionist and author of Big Green Cookbook (Wiley, 2009). Be sure to keep the oven door closed until the prescribed time; the oven can lose 25 to 30 degrees of heat every time the door opens. Here’s how early to cut the heat with these four favorite foods.
Pizza: 5 minutes
Cookies: 8 minutes, or once dough spreads to full cookie shape
Brownies: 8 minutes
Roasted vegetables: 10 minutes
