Asparagus
How to select: This lily family member hails from the Mediterranean. Stalks should be bright green, with tightly closed tips. Vibrant color signifies tenderness, regardless of stalks’ thickness. To store, stand upright in a glass with a little water, or wrap ends in a wet paper towel and cover loosely with plastic; refrigerate.
Preparation tips: Steam, blanch, roast, grill, sauté—you can’t go wrong with fresh asparagus. Drizzle with balsamic or fruit-infused vinegar and top with shaved cheese and toasted sesame seeds. Sandwich grilled asparagus, sliced tomatoes, and crisp turkey bacon for an updated BLT.
Health benefits: Rich in folic acid, potassium, and cancer-fighting glutathione.
