Celery root (Celeriac)
How To Select: Although it would likely take first prize in an ugly-vegetable contest, this gnarly root vegetable harbors a creamy, savory flesh similar to celery, but with parsley and lemon tones. Choose baseball-size samples and refrigerate in a plastic bag.
Preparation Tips: Completely slice off tough outer layers. Peeled pieces brown quickly; dunk in water spiked with lemon juice to avoid discoloration. Grate raw into citrus and spinach salads, or substitute for celery in soups, stews, and stir-fries. For a tasty breakfast hash, sauté thin slices with grated potato, chopped onion, and black pepper.
Health Benefits: A fiber powerhouse, celery root also contains potassium and vitamin C.
